- 1 pound sweet mini peppers (tops cut and cored)
- ½ pound ground turkey
- 1 ½ tablespoons taco seasoning
- 2 to 6 tablespoons water
- 3 ounces cream cheese (softened)
- ¼ cup black beans
- ¼ cup corn
- ¼ cup pepper jack cheese (shredded)
- Cilantro for garnish
Preheat oven to 400º F.
Cut tops off your peppers and slice them in half. Be sure to clean out the seeds.
Cook the ground turkey in a medium sauce pan until no longer pink (5-7 minutes). Drain if needed and place back in pan. Add taco seasoning and water. Cook 2 more minutes to combine. Mixture should be damp. Add more water if needed.
Turn heat to low, mix in cream cheese until melted and blended together. Turn off heat.
Stir in black beans and corn.
Add a dollop of the meat mixture to each mini pepper and set on cookie sheet.
Bake for 15 minutes.
Sprinkle pepper jack cheese on top of each popper.
Bake an additional 3 to 5 minutes, or until cheese is melted.
Garnish with cilantro. Serve and enjoy!
