Fresh Strawberry Galette

When you mix strawberries with pastry, only good things happen. This week’s Coastal recipe mingles fresh strawberries with a galette flat cake. Gather all of your ingredients, put it all together in four simple steps, and treat your whole family to this wonderfully tart, berry good summertime creation. Step 1

Ingredients (Crust)

  • 1 ¼ cup unbleached white flour
  • ¼ teaspoon salt
  • 8 tablespoons frozen, unsalted butter (cut into pieces)
  • ¼ cup plain Greek yogurt
  • ¼ cup ice cold water
  • 2 teaspoons lemon juice

Directions (Crust)

Combine flour and salt into a bowl, toss to mix. Add the butter. Use a pastry cutter to cut butter into the flour mixture until it looks crumbly. Transfer mixture to a large bowl.

In a smaller bowl, whisk together yogurt, water and lemon juice. Pour over flour mixture. Use your hands or a spoon to form dough into a ball. Wrap in plastic and put into freezer for 20 minutes.

Step 2

Ingredients (Almond Filling)

  • ½ cup ground almonds
  • 1 tablespoon flour
  • ¼ cup sugar

Whisk together almond meal, flour, and sugar into small bowl.

Step 3

Ingredients (Strawberries and Prep)

  • 3 ½ cups fresh strawberries (washing, hulled, sliced)

Preheat oven to 400º F and line a baking sheet or cookie stone with parchment paper and set aside. On a well-floured surface, roll the chilled dough into a 12-inch circle. Trim the edges slightly to make it smooth. Transfer dough to parchment paper.

Spread the almond filling evenly over the dough, leaving a 2-inch border on the outside edge. Arrange strawberries over the mixture and dust with sugar. Fold over the 2-inch edge of the dough and pleat to create your galette.

Step 4

Ingredients (Glaze and Baking)

  • 1 egg yolk
  • 1 teaspoon water

Whisk together egg yolk and water, then brush over the crust and bake for 30 minutes or until crust is puffy and golden brown. Serve with whipped cream!
