Dutch Oven Chicken & Dumplings

Ingredients (Dumplings)         

  • 1 cup all-purpose flour
  • 1 egg (beaten)
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 2 tablespoons chives (chopped)
  • ½ cup buttermilk

Ingredients (Chicken Soup)         

  • 1 tablespoon olive oil
  • 1 onion (chopped)
  • 1 large carrot (chopped)
  • 1 large celery stalk (chopped)
  • ½ teaspoon dry thyme
  • 5 cups chicken broth
  • 1/3 cup all-purpose flour
  • ½ cup frozen peas
  • 2 cups roasted chicken (white, dark, or combination) (shredded)
  • Salt and pepper to taste

Directions

Heat the olive oil over medium-high heat in your large Dutch Oven. Cook the chopped onion, carrot, and celery 5-7 minutes until the onion becomes translucent. Add the thyme and 5 cups of chicken broth.

Combine a ladle of the broth from the pot with the flour and whisk. Pour back into the pot, and whisk until smooth.

Stir in the frozen peas and the shredded chicken. Season with salt and pepper. Cook for 5 minutes.

While the broth is cooking, prepare the dumplings by whisking together all the dumpling ingredients. Do not overmix. Drop small amounts of dumpling batter using a spoon into the thick broth. Be sure to add all the dumpling batter.

Cover the pot and allow to simmer for 15 to 20 minutes (or until dumplings are cooked). Test the dumplings by using a toothpick. If you can insert the toothpick into the dumpling and pull it out without any of the batter stuck to the toothpick, then they are done.
