Homemade for the Holidays: Gluten-free Cranberry Sweet Bread

There’s something comforting about a slice of sweet bread on a cold winter day. Add some cranberries and gluten-free flour to the mix, and you have a winning, homemade for the holidays creation that you can bring to any get-together or give as a gift. We have a special step-by-step recipe along with some gluten advice.

Choose Your Flour Wisely

The right (or wrong) flour can spell disaster for some folks. If you want to make this recipe gluten-free, choose almond flour, buckwheat flour, sorghum flour, amaranth flour, teff flour, arrowroot flour, brown rice flour, or oat flour. Flours made from wheat, barley, rye, spelt, and triticale contain gluten.

Ingredients:

  • Butter (6 tablespoons)
  • Sugar (1 cup)
  • Eggs (2 room temperature)
  • Flour Mix (2.5 cups)
  • Xanthan Gum (1 teaspoon; omit if your flour contains xanthan gum)
  • Baking Powder (1 teaspoon)
  • Baking Soda (1/2 teaspoon)
  • Salt (3/4 teaspoon)
  • Fresh Cranberries (10 ounces, halved)
  • Milk (1/2 cup room temperature)
  • Sour Cream (1/2 cup room temperature)
 

Directions


Preheat your oven to 350º F.


In a mixer, add the butter and begin mixing on medium until fluffy. Slowly add sugar and eggs until incorporated completely.

In a separate bowl, mix your flour, baking powder, baking soda, salt, and xanthan gum. Mix with a fork.


In another bowl, add 1 tablespoon of your dry mixture to the cranberry halves. Toss to coat. This will keep the cranberries from sinking to the bottom of the bread. There’s probably a scientific explanation for this, but we’ll just chalk it up to good old-fashioned, hand-me-down smarts.

Mix your milk and sour cream to make a room temperature yogurt.
Add a small portion of the dry mixture to the wet ingredients in the mixer. Then add some of the yogurt. Turn on the mixer and alternate adding the dry and yogurt mixture until everything is in the mixer.

Once done, remove from the mixer and fold the berries in by hand.

Grease a bread pan and pour in the mixture.

Sprinkle some sugar on top

Bake at 350º F for a full hour. Rotate once at 30 minutes.
