Greta's Goodies: No-Bake Cookies

No-bake cookies are an easy-to-make treat the whole family can enjoy. Today, Greta is sharing her favorite recipe. All you’ll need are seven ingredients, a non-stick pot, and plenty of eager taste-testers to devour them the minute they cool off.

Ingredients


Here’s what you’ll need to make your own no-bake cookies. For a double batch, simply double all the ingredients and follow the directions as usual.

  • 1 cube butter (4 ounces)
  • 1 ¾ cup sugar
  • ¼ cup cocoa
  • ½ cup milk
  • ½ teaspoon vanilla
  • ¾ cup peanut butter (almond butter will also work for those with peanut allergies)
  • 3 cups quick oats



Directions


These cookies are deliciously easy to make and even easier to enjoy.


Melt the butter in your non-stick pot. Be sure the pot is big enough for all your ingredients.

In a pot on low heat, add your butter and allow it to melt. While it’s melting, mix the cocoa and sugar in a bowl and set aside. Once the butter is melted, add the milk and cocoa/sugar mixture. Stir until combined.


Allow your no-bake batter to come to a boil over medium heat.

Once you reach the boiling point, spoon a small ball out of the mixture and drop it into a glass of cold water to proof it. If your cookie batter forms into a ball, you’re ready to add the other ingredients. If not, allow to boil another minute and try again. Be careful not to over-cook it.

Add the vanilla, peanut butter, and quick oats to the pot and mix thoroughly.

Place spoon-sized drops of batter onto a wax-paper lined cookie sheet and allow them to cool until hardened.
