Greta’s Goodies: Hearty Garden Stew

Every month in 2021, Greta is sharing another of her goodies, including recipes as well as crafts and more. This month, it’s her famous hearty garden stew made with everything she and her family grew, raised, harvested, and canned (or froze) the prior year.  

Stew is Not an Exact Science

Greta’s stew is super simple and made from stuff you probably have in your own freezer or can get at the store. If you don’t have an ingredient, don’t sweat it. Make it how you like it. This recipe includes some ingredients Greta prepared and preserved in 2020, including her canned stew meat, and bone broth or tomatoes as a base. Ingredients

  • Vegetables (Greta used green beans, corn, celery, and carrots)
  • Broth (bone broth) or tomatoes as a base
  • Potatoes (diced)
  • Stew meat
  • Sage
  • Parsley
  • Salt and pepper to taste

 

Directions:

Using an eight-quart stockpot, chop and sauté an onion & Garlic until it is translucent.

Greta then added 2-quart jars of her canned tomatoes as a base and added water.

Then, she added her diced potatoes and vegetables. Each of the veggies, that they grew last year, were in quart bags from the freezer.

She then added a quart jar of stew meat. You can use 2 pounds of fresh stew meat from the store as well.

Allow to simmer.

Finally, add thyme and parsley and salt and pepper to taste. Les it simmer for a few hours.

You’ll have enough to feed a big family for several days. Be sure to pair it with your favorite bread.

Quick Adjustments: Want your stew to be a bit thicker? Add flour. Instead of a tomato base, you can use a soup stock or bullion broth and water.
