Toffee Barking Crackers

December 8, 2016

This is a take on a Christmas classic, Bark Candy. This recipe is quick, made with easy to find ingredients and is a real crowd pleaser at the Christmas party.

Combining toffee with saltines brings out a nice salted caramel flavor under the generous layer of melted chocolate chips. Top with crushed pecans and let the party begin!

Ingredients:

  • 35 – 40 saltine crackers (or graham crackers)
  • 1 cup butter (2 sticks)
  • 1 cup packed brown sugar
  • 1 ½ cups semi-sweet chocolate chips
  • 1 ½ cups coarsely chopped walnuts or pecans

Directions:

Preheat oven to 350°F.

Line a 15” x 10” x 1” pan with parchment paper or foil.

Coat very generously with nonstick cooking spray.

Line up crackers in a single layer in rows on foil.

Meanwhile, melt butter and brown sugar in a small saucepan.

Bring to a boil; boil 3 minutes. Immediately pour over crackers and spread evenly with a spatula.

Bake 5 minutes. Remove from oven and turn oven off. Sprinkle chocolate chips over crackers and return baking sheet to the oven for 5 minutes more, or until chocolate chips are melted.

Sprinkle nuts on top.

Cool completely in the refrigerator.

Cut or break into small pieces and serve.
